Ingredients:

75 g coconut flakes

80 g pumpkin seeds

80 g sunflower seeds

80 g sesame seeds

70 g poppy seeds

2 tbsp chia seeds

50 g goji berries

2 tsp cinnamon

2 tsp vanilla extract 1 tsp salt

2 tbsp melted coconut oil

120 ml rice malt syrup, honey or maple syrup

Method:

Preheat oven to 170 degree C

In a bowl, mix all ingredients through thoroughly with your hands. You can use a food processor but you will have a finer mixture. Cover a 30×20 cm baking dish with baking paper and pour mixture into it. Push mixture in firmly to flatten. Bake for 15-20 minutes or until golden. Leave to cool and then cut into 12 bars and store in a covered container. YUM!
