You might think that the year only just started, but guess what? You blinked, and now Easter is around the corner. While your immediate thought is that rich chocolate-y goodness means unhealthy life choices, each year I’m seeing more and more Easter alternatives that I can’t help but share with you.
Dairy free Easter eggs..
– ¼ cup of raw cacao powder
– ¼ cup of coconut oil
– ½ tblspn rice malt syrup or raw honey to sweeten
– Pure vanilla extract to taste
Melt the raw cacao and coconut oil together. I like to do this in a bowl over a saucepan so as not to burn the mixture. Take it off the stove and slowly add the vanilla extract and rice malt syrup. You can add crushed nuts or even cut up berries to the mix for something a little more exotic! I’ve not tried it, but I reckon smashing up a little bit of banana into it would be pretty mmmmm as well..
Pour the mix into whatever moulds you like – eg: egg shaped ones, bunny ones, whatever you have at home ones..! Pop them in the freezer until hard. You may wish to keep them in the fridge after this.. or just eat them all in one quick go!
