Raw Brownies… yum!

RAW BROWNIE

Ingredients

2 cups walnuts

2.5 cups dates (preferably Medjool)

1 cup raw cacao

1 cup roughly chopped almonds

1 tsp pure vanilla essence

1 tsp cinnamon

1/4 tsp good quality salt (e.g. Celtic / Himalayan / etc)

METHOD

Place walnuts in food processor and blend on high speed until nuts are finely ground. Add cacao, cinnamon, vanilla and salt and pulse to combine. Add dates one at a time through feed tube of food processor while it is running. The mix should look like cake crumbs which will easily stick together when pressed. Add chopped almonds and press into a lined container. Place in fridge for at least an hour before serving.Enjoy!

Food facts 🙂

* Walnuts are high in a plant omega 3 known as ALA – an anti inflammatory compound. They contain vitamin E, folate and rare antioxidants (up to 90% of which are in the skin, so don’t peel them!). They are high in l-arginine which offers vascular benefits, but this can deplete lysine, which is not a good thing if you have herpes / cold sores (lysine is protective against outbreaks!).

* Dates are rich in many minerals including calcium, iron, phosphorus, magnesium and zinc, making them great for boosting iron levels and helping to keep bones healthy. They are a great source of fibre too.

* Cacao is a potent source of magnesium – the anti stress mineral. It’s also a powerhouse of antioxidants – these are great for anti ageing amongst many other health giving benefits.

* Almonds are alkalising, helping the body be less acidic. They are one of the few proteins to act in this healthful manner. They also provide good fats (critical to health) and contain phosphorus for string teeth and bones.

* Cinnamon has become quite the buzz word of late, and rightly so. This yummy spice can help to lower the ‘bad’ cholesterol, can help to lower blood sugar levels and tastes great! Use it wherever you can – not just on sweet things!

A note on nuts.. always try to opt for organic and raw. Buy smaller packets more often to ensure their good oils are as fresh as can be. I store mine in the fridge too..
